What to do with all those tomatoes - roast them - I made two pans of roasted tomatoes, some garlic and banana peppers. Slice the tomatoes, sprinkle with salt, pepper and herbs de Provence then drizzle with a little olive oil. Bake in a low, slow oven (225 degrees) for 4 hours. After they are finished, they taste like candy. I put them in a zip lock bag and in the freezer for later. This is what they look like BEFORE
